Chicken with Olives & Shredded Potatoes
Ingredients:

  • Whole chicken, cut into fourths
  • 2 tbsp olive oil
  • Melted tbsp of butter (optional)
  • 2 large onions peeled and cut into slices
  • ½ cup of kalamata olives
  • Small preserved lemon
  • Large tbsp of chopped cilantro
  • 2 cups of water
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp turmeric
  • ½ tsp saffron
  • ½ ground ginger
Preparations:
In a large sauce pan with handles over medium heat, add the olive oil and then the chicken. Add all spices and turn side to side for 10 minutes or until golden. Combine the onions, then cilantro and water. Cover and let cook until the chicken is tender and then add the olives and preserved lemons. Cut into slices lengthwise.
Optional: Place the chicken on a baking sheet and brush with melted butter. Roast for 10 – 15 minutes at 350°.

Potatoes

Ingredients:
  • 4 potatoes, peeled
  • 1 egg
  • 2 garlic cloves peeled and crushed.
  • 1 tsp chopped parsley
  • ½ tsp salt
  • ½ tsp black pepper
  • Frying oil
Preparations: In a large bowl, shred the potatoes. Take the excess of water and add the beaten egg, the salt, black pepper, garlic, and parsley. Mix all ingredients together. In a large frying pan, form small balls from the potatoes mixture. Fry until golden brown. Place the fried, shredded potatoes over a paper towel. Position over the chicken and serve warm.
